Ingrédients

  • dried tremella (snow fungus) 1 cluster
  • snow pear (Asian pear) 1 large
  • dried lily bulb 15 g
  • red dates, torn 4
  • rock sugar (to taste) 15 g
  • water 1.2 L

💡 Astuce cuisine

The longer tremella simmers, the more gelatinous the broth becomes.

    Soak the tremella in plenty of water for 30–60 minutes, then trim the yellow base and tear into small florets.

    Rinse the lily bulb and soak 15 minutes; tear the red dates and remove pits.

  3. 3

    Simmer the tremella, lily bulb and dates in water for 30 minutes until the broth turns silky.

  4. 4

    Peel and chunk the pear, add it with rock sugar, and simmer another 15–20 minutes.

  5. 5

    Serve warm, or chilled in summer.
