Shiitake Umami Vegetable Broth

Ingrédients

  • dried shiitake mushrooms 6
  • onions, halved 2
  • carrots, chopped 2
  • celery with leaves 1 stalk
  • ginger 3 slices
  • cold water 2 L

Keep a bag of vegetable trimmings (carrot peel, mushroom stems) in the freezer for this broth.

    Rinse the shiitake quickly, then soak in 500 ml warm water for 20 minutes.

    Combine the mushrooms and their strained soaking liquid with all vegetables and ginger.

  3. 3

    Top up with cold water to 2 litres and bring to a bare simmer.

  4. 4

    Cook uncovered for 45–50 minutes without a rolling boil, skimming once or twice.

    Strain and use immediately, or freeze in portions for up to 3 months.
